What is chocolate and what is it made of? The main ingredient of chocolate is cacao. This is extracted from cocoa beans. To make chocolate, the cocoa beans are first cleaned and then roasted. After roasting, the cacao beans are 'broken'. The shell (the husk) of the cocoa bean breaks open and is blown away. In this way, only the kernel (also called nib) remains. These kernels/nibs are ground into a thick paste. This is cacao mass. When the fat is extracted from the cacao mass, you get cacao butter. The part that remains (after the fat has been extracted) is ground into cacao powder.
