    Callebaut Cacao Powder Rouge Ultime 1kg has an intense cocoa flavour with complex smoky notes and a rich roasted chocolate flavour. With a pH value of 7.8–8.4, it belongs to the alkalised cacao powders, which gives it a deep dark colour and a round, powerful cocoa flavour. The high fat content of 22–24% gives the powder a creamy mouthfeel and a full texture, making chocolate preparations extra rich and intense in flavour.

    This cacao powder is ideal for powerful chocolate preparations. In baked goods such as brownies, chocolate cakes, muffins and biscuits, it provides a deep colour and a distinct chocolate flavour. Thanks to its higher fat content, it adds extra body to creams, mousses, ganache and chocolate fillings. The full roasted cocoa flavour also comes through well in desserts, chocolate sauces and hot chocolate drinks. Due to its higher pH value, this cacao powder combines well with recipes that use baking powder and less well with baking soda.
