Callebaut Bakeproof Hazelnut Filling Creme Dell'Artigiano Gold 10 kg Creme Dell'Artigiano by Callebaut is a sensational and soft baking paste with intense hazelnut flavour. It contains 18% of real hazelnuts The advantage of this 'paste' is that it can be baked along in, for example, buns, croissants and (coffee) rolls, it gives them a soft and deliciously rich hazelnut core. The Creme dell'Artigiano can withstand temperatures of up to 200 C. The paste does not dry out and retains (even after baking) its soft mouth feel. This product also contains no hydrated fat.
How to use? Soften before piping into dough or pastry. If you would like to use the cream to coat pastries and cakes with icing, warm it slightly to 40 C.
