Brand New Cake Tonka beans 50g
These Brand New Cake Tonka beans are very aromatic. They have hints of vanilla, rum and almond predominate. Tonka beans are soaked in alcohol for 24 hours and then dried. During this process, fermentation takes place, which causes a kind of grey haze to appear on the outside of the bean. This grey haze are the courmarin crystals, the main flavouring of the tonka bean.
Using Brand New Cake Tonka Beans
The tonka bean is pre-eminently a flavouring in desserts (ice cream, crème brûlée), for example, but also in chocolates. You can also use the beans in savoury dishes. Grate the beans finely before use. Then cook the bean along (like vanilla) with the relevant cream, milk or cream. It is important that you let the flavour sink in and store the container tightly closed. The overpowering aroma will otherwise permeate throughout your fridge. The tonka bean itself is not edible, so you should always strain it in liquid. Avoid overuse.
Storage advice: Store in a cool, dark and dry place. Close spring packaging tightly after each use.
