Brand New Cake Tartaric acid (E334) (liquid) solution in bottle
Tartaric acid, solution in bottle has several functions in food:
- Gives a distinctive acidic flavour to products.
- Regulating the acidity of processed products.
- Component of baking powder. The tartaric acid reacts with carbonates to form carbon dioxide.
- As a natural preservative.
- Stabiliser of protein. Enhancing the volume and heat resistance of egg white foam.
- Preventing crystallisation of sugar syrups.
- Controlling discolouration of cooked vegetables.
Sugar Stretching/Sugar Art with Tartaric Acid
Adding acid to a caking sugar solution promotes hydrolysis (splitting of sugar (sucrose)) into glucose and fructose. As more sugar hydrolyses into glucose and fructose, the consistency becomes softer.
Adding acid makes blowing easier. The downside is that you cannot put this sugar under a lamp or back under the lamp for too long. Especially for practice, adding acid is recommended.
Standard recipe with Tartaric Acid Solution
350 grams of glucose (clear syrup), 1.5 kg of sugar, 550 millilitres of water and 11 drops of tartaric acid solution.

- Keep this product out of the reach of children.
- After using Brand New Cake Tartaric Acid, wash hands thoroughly.
- Wear protective gloves, protective clothing, eye protection, face protection.
Measurements- In case of contact with skin: wash with plenty of soap and water.
- In case of contact with eyes: rinse gently with water for several minutes, remove contact lenses and continue rinsing if possible.
- In case of undiluted ingestion: consult an antivenom centre or doctor immediately.
- Remove and wash contaminated clothing before reuse.
Storage: in sealed original container. Store cool and dry in a ventilated area.
