Recipe
You need about 20g of gelatine powder per litre for good firming. Want a firm (free-standing) pudding? Then you will need about 40g.
Procedure
Add the gelatine powder to the liquid. While stirring, heat to ±40C, this way the gelatine powder dissolves. Be careful not to let it boil. Then cool in the fridge and leave to set.
Why Beef Gelatine?
When it comes to gelatine, there is no better variety than beef. As crazy as it sounds to add anything with beef to your dessert or patisserie. But as usual, nature once again knows better, and gelatine powder made from beef gives an unëven bond. Gelatine powder has the advantage over gelatine sheets that it spreads more evenly through the emulsion you want to bind. You have less chance of lumps of gelatine, which of course only enhances the flavour. You won't taste the gelatine powder beef at all in your end result, it's flavourless.
Gelatine powder can be used in bavarois, mousses and, for example, cheesecake. You can also use beef gelatine powder for a jelly.
Jelly is used, as confectioners say, to make a "mirror" on a cake, or to embellish a dessert.
