BrandNewCake Barley Malt Flour Active Organic 150g Biological barley malt flour active from the Brand New Cake brand. Barley malt flour active is a natural enzymatic bread improver. It contains mainly amylases (starch-degrading enzymes) but also proteases (protein-degrading enzymes)). Amylase breaks down the starch to maltose (maltose) which serves as food for the yeast. The maltose that remains provides a connection to the proteins during baking, giving flavour and colour. The malt flour gives the bread more volume. With this bread improver, the ageing process is prevented, making the bread last longer.
Dosage: 5-20 grams per 1kg of flour. 0.5-2% based on flour weight.
