Book: Vlaai - Roel Peeters
Limburg vlaai: everyone knows it, but very few people have ever baked a vlaai themselves. Now baker Roel Peeters is changing that!
Specially for this book, Roel has studied the history of flan and its significance for Limburg culture. He wrote out his own recipes, created new flan recipes, but also picked up his old trade books. You will therefore find a wide variety of classic and new flan recipes in this book, using different techniques:
Flans without finishing like the crumble flan, rice flan and open pear flan
flans with whipped cream like the iceberg flan and christoffel flan
open fruit flans and various bavarois flans like the white chocolate mousse with blueberry jam.
As icing on the flan, Roel also offers some Limburg delicacies like a bienenstich and nonnevotten.
A unique book for Dutch flans.

Roel Peeters was born in the Limburg church village of Kessel, between Venlo and Roermond, on the west side of the river Maas. There he grew up as a baker's son, among the flans in his father's bakery. A third-generation baker, he took over his parents' business and, together with his wife Cathelijne, runs the bakery in his hometown and bakes the most delicious Limburg flans every day.
