The product can be used hot or cold and should be made with milk.
Recipe:
Full milk -1000g
Flavoured Cream -100g
Fine Sugar -230g
Powdered Skim Milk -40g
Base Babbi 100 C/F -100g
Procedure
Mix all ingredients and heat, stirring gently
to +/- 80-85°C. If you don't have a thermometer, heat until the milk is steaming but not yet boiling.
do not boil yet, if you let the milk boil there is a risk that the milk sugars and
proteins caramelise and burn, resulting in less fine ice cream. Chill the mixture again in a cold bain-Marie or leave it covered.
stand, when cooled transfer to the ice cream maker and turn into ice cream.

Low milk powder, coconut oil, sugar, anhydrous glucose syrup, emulsifier, sucrose esters of fatty acids, mono- and diglycerides of fatty acids, acetic acid esters of mono- and diglycerides of fatty acids; dextrose, cream powder, stabiliser, locust bean gum, glucagon potassium phosphates, milk proteins, salt, modified starch, flavourings. May contain egg, soy.
