This American Patent Flower is a flour milled from 100% hard red winter wheat. This flour is a very 'punishing flour' with strong proteins. The hard red winter wheat is a (hard) wheat that is sown in autumn. Versatile wheat variety that is mostly used as a wheat flour in the Netherlands.

It is mainly applied for the preparation of luxury breads and luxury oliebollen.
