What is the difference between almond paste and almond marzipan?
Although the products are very similar, almond marzipan is somewhat different from almond paste. This is because almond marzipan contains more sugar and fewer almonds than almond paste. So the marzipan is very sweet and therefore perfect to use on sweet treats such as pastries. In addition, the structure of marzipan is also somewhat finer than that of almond paste. This almond marzipan has a 1:3 ratio. This means that 1 part almonds and 3 parts sugar have been used to make the marzipan.
Produced using Lubecker's hot method
This almond marzipan is prepared using Lubecker's hot method. This is a time-consuming process where hot marzipan is made according to strict rules. This hot method means the marzipan has an intense almond flavour and is very stretchy. This allows you to process it easily. Warm marzipan cracks much less easily than marzipan made using the quick cold method. This marzipan will also dry less quickly.
